- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup fresh spinach
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried Italian seasoning
- 1/4 cup grated Parmesan cheese
- 8 spears grilled asparagus
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Season chicken with salt and pepper, then cook until browned and fully cooked (about 6-7 minutes per side). Remove and set aside.
- In the same skillet, sauté garlic for 30 seconds.
- Add heavy cream, chicken broth, sun-dried tomatoes, and Italian seasoning. Simmer for 3 minutes.
- Stir in spinach and cook until wilted.
- Return chicken to the skillet, sprinkle with Parmesan cheese, and simmer for 2 minutes.
- Serve with grilled asparagus.
