- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 tsp dried Italian seasoning
- 1/2 cup grated Parmesan cheese
- 1 cup spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped
- 3 cloves garlic, minced
Instructions
- Season chicken with salt, pepper, and garlic powder.
- Heat olive oil in a skillet over medium heat. Cook chicken until golden, about 6 minutes per side. Remove and set aside.
- In the same skillet, add garlic and sauté for 30 seconds.
- Pour in chicken broth, heavy cream, and Italian seasoning. Stir well.
- Add Parmesan cheese, spinach, and sun-dried tomatoes. Simmer until sauce thickens, about 5 minutes.
- Return chicken to the skillet, coat with sauce, and cook for 2 more minutes.
Notes
- Use fresh spinach for better texture.
- Adjust seasoning to taste.
- Serve with pasta or crusty bread.
