- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 cup grated parmesan cheese
- 1 cup chopped spinach
- 1/2 cup sun-dried tomatoes, chopped
- 3 garlic cloves, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Cook chicken for 5-6 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, add garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and scrape any browned bits from the pan.
- Add heavy cream, parmesan cheese, and Italian seasoning. Stir until smooth.
- Bring to a simmer and cook for 2-3 minutes until slightly thickened.
- Add spinach and sun-dried tomatoes. Cook for 2 minutes until spinach wilts.
- Return chicken to the skillet and simmer for 2 more minutes.
- Serve immediately.

- Use full-fat cream for best texture
- Fresh spinach works better than frozen
- Adjust garlic to your preference
