Description

This creamy Tuscan salmon is a delicious and easy dish made with fresh spinach, sun-dried tomatoes, and a rich cream sauce. Perfect for a quick weeknight dinner!


Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season the salmon fillets with salt and pepper. Place the salmon in the skillet, skin-side down, and cook for 4-5 minutes on each side until cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
  4. Pour in the heavy cream and bring to a simmer. Stir in sun-dried tomatoes and fresh spinach. Cook until the spinach wilts.
  5. Add grated Parmesan cheese and stir until melted and smooth. Season with salt and pepper to taste.
  6. Return the salmon to the skillet, spooning the creamy sauce over the top. Cook for another minute to heat through.
  7. Garnish with fresh basil and serve immediately.
