- 4 salmon fillets
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup fresh spinach
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season the salmon fillets with salt and pepper. Place the salmon in the skillet, skin-side down, and cook for 4-5 minutes on each side until cooked through. Remove from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
- Pour in the heavy cream and bring to a simmer. Stir in sun-dried tomatoes and fresh spinach. Cook until the spinach wilts.
- Add grated Parmesan cheese and stir until melted and smooth. Season with salt and pepper to taste.
- Return the salmon to the skillet, spooning the creamy sauce over the top. Cook for another minute to heat through.
- Garnish with fresh basil and serve immediately.
