  • 2 eggs, beaten
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Cut fish fillets into 1-inch thick strips.
  3. In a bowl, mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
  4. Dip each fish strip into beaten eggs, then coat with breadcrumb mixture.
