Ingredients

  • 1 lb white fish fillets (cod, haddock, or tilapia)
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs
  • 2 tbsp flour
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Cut fish fillets into 1-inch-wide strips.
  3. In a bowl, mix breadcrumbs, Parmesan, paprika, garlic powder, salt, and pepper.
  4. In another bowl, whisk eggs.
  5. Dip each fish strip in flour, then egg, then breadcrumb mixture, pressing lightly to coat.
  6. Place coated fish sticks on the baking sheet and drizzle with olive oil.
  7. Bake for 12-15 minutes, flipping halfway, until golden and crispy.
  8. Serve with tartar sauce or lemon wedges.
