Ingredients

- 1 lb salmon fillet, skin removed and cut into 1-inch cubes
- 1/2 cup cornstarch
- 2 eggs, beaten
- 1/2 cup panko breadcrumbs
- 1/4 cup mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp sriracha
- 1 tsp honey
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp vegetable oil
- 1 tbsp chopped green onions (for garnish)
Instructions
- Pat salmon cubes dry with a paper towel.
- Season salmon with salt, pepper, and garlic powder.
- Dredge salmon in cornstarch, then dip in beaten eggs, and coat with panko breadcrumbs.
- Heat oil in a skillet over medium-high heat.
- Fry salmon bites for 2-3 minutes per side until golden and crispy.
- Drain on paper towels.
- Mix mayonnaise, sweet chili sauce, sriracha, and honey in a bowl.
- Toss salmon bites in the sauce or drizzle on top.
- Garnish with green onions and serve immediately.
Notes
- Use fresh salmon for best texture.
- Adjust sriracha for more or less heat.
- Serve with lime wedges for extra flavor.
