Ingredients

- 4 fish fillets (cod or haddock)
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 eggs
- 1/4 cup flour
- 4 medium potatoes
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
Instructions
- Preheat oven to 400°F (200°C).
- Cut potatoes into fries and toss with olive oil, salt, pepper, and paprika.
- Spread fries on a baking sheet and bake for 25 minutes.
- Mix breadcrumbs and Parmesan cheese in a shallow dish.
- Dip fish fillets in flour, then beaten eggs, then breadcrumb mixture.
- Heat oil in a pan over medium heat and cook fish for 3-4 minutes per side.
- Serve fish with fries.
