Ingredients

  • 4 fish fillets (cod or haddock)
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 eggs
  • 1/4 cup flour
  • 4 medium potatoes
  • 2 tbsp olive oil

  • 1/2 tsp black pepper
  • 1 tsp paprika

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut potatoes into fries and toss with olive oil, salt, pepper, and paprika.
  3. Spread fries on a baking sheet and bake for 25 minutes.
  4. Mix breadcrumbs and Parmesan cheese in a shallow dish.
  5. Dip fish fillets in flour, then beaten eggs, then breadcrumb mixture.
  6. Heat oil in a pan over medium heat and cook fish for 3-4 minutes per side.
  7. Serve fish with fries.
