Ingredients

- 1 small head of green cabbage, shredded
- 1 small head of red cabbage, shredded
- 2 large carrots, grated
- 1 red bell pepper, diced
- 1/2 cup fresh cilantro, chopped
- 1/4 cup green onions, sliced
- 1/2 cup toasted sunflower seeds
- 1/2 cup apple cider vinegar
- 1/4 cup olive oil
- 2 tablespoons honey
- Salt and pepper to taste
Instructions
- In a large bowl, combine the shredded green and red cabbage, grated carrots, diced red bell pepper, chopped cilantro, and sliced green onions.
- In a small bowl, whisk together the apple cider vinegar, olive oil, honey, salt, and pepper until well combined.
- Pour the dressing over the cabbage mixture and toss to coat evenly.
- Add the toasted sunflower seeds and toss gently again.
- Serve immediately or refrigerate for up to an hour before serving for the flavors to meld.
