Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 eggs
  • 1/2 cup all-purpose flour
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 4 medium potatoes, cubed
  • 3 tbsp butter
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pound chicken breasts to even thickness and season with salt and pepper.
  3. Set up three bowls: flour in first, beaten eggs in second, and breadcrumbs mixed with Parmesan in third.
  4. Coat each chicken breast in flour, then egg, then breadcrumb mixture.
  5. Heat olive oil in a pan and cook chicken until golden brown, about 3-4 minutes per side.
  6. Transfer chicken to baking dish, top with marinara sauce and mozzarella cheese.
  7. Toss potatoes with melted butter, garlic, oregano, salt, and pepper.
  8. Arrange potatoes on baking sheet alongside chicken.
  9. Bake for 20 minutes until cheese is melted and potatoes are tender.
  10. Serve hot.

  • Use panko breadcrumbs for extra crispiness.
  • Let chicken rest 5 minutes before serving.
