- 2 boneless, skinless chicken breasts
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 eggs
- 1/2 cup all-purpose flour
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 4 medium potatoes, cubed
- 3 tbsp butter
- 3 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat oven to 400°F (200°C).
- Pound chicken breasts to even thickness and season with salt and pepper.
- Set up three bowls: flour in first, beaten eggs in second, and breadcrumbs mixed with Parmesan in third.
- Coat each chicken breast in flour, then egg, then breadcrumb mixture.
- Heat olive oil in a pan and cook chicken until golden brown, about 3-4 minutes per side.
- Transfer chicken to baking dish, top with marinara sauce and mozzarella cheese.
- Toss potatoes with melted butter, garlic, oregano, salt, and pepper.
- Arrange potatoes on baking sheet alongside chicken.
- Bake for 20 minutes until cheese is melted and potatoes are tender.
- Serve hot.
Notes
- Use panko breadcrumbs for extra crispiness.
- Let chicken rest 5 minutes before serving.
- Fresh basil makes a good garnish.
