Description

Crispy Parmesan Chicken Bites with Smoked Cajun Alfredo combines tender chicken pieces coated in a crunchy parmesan crust, served with a creamy, smoky Cajun-spiced Alfredo sauce.


Ingredients

  • 500g chicken breast, cut into bite-sized pieces
  • 1 cup grated parmesan cheese
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1 cup heavy cream
  • 2 tbsp butter
  • 1 tbsp Cajun seasoning
  • 1/2 cup grated parmesan cheese (for sauce)

Instructions

  1. Preheat oven to 200°C (400°F) and line a baking tray with parchment paper.
  2. Mix breadcrumbs, parmesan, garlic powder, smoked paprika, salt, and pepper in a bowl.
  3. Dip chicken pieces in beaten eggs, then coat with the breadcrumb mixture.
  4. Place chicken on the baking tray and drizzle with olive oil. Bake for 20 minutes or until golden and crispy.
  5. For the sauce, melt butter in a pan over medium heat. Add Cajun seasoning and stir for 1 minute.
  6. Pour in heavy cream and let it simmer for 5 minutes, stirring occasionally.
  7. Add parmesan cheese and stir until the sauce thickens.
  8. Serve chicken bites with the smoked Cajun Alfredo sauce.
