- 4 boneless, skinless chicken
- 1 cup grated parmesan cheese
- 1 cup breadcrumbs
- 2 eggs
- 1/2 cup all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 tbsp butter
Instructions
- Preheat oven to 375°F (190°C).
- Mix parmesan cheese, breadcrumbs, salt, and pepper in a shallow dish.
- Beat eggs in another dish. Place flour in a third dish.
- Coat chicken in flour, dip in eggs, then press into breadcrumb mixture.
- Heat olive oil in a pan over medium heat. Cook chicken until golden, about 3 minutes per side.
- Transfer chicken to a baking sheet and bake for 15 minutes.
- In the same pan, melt butter and sauté garlic for 1 minute.
- Add chicken broth and heavy cream. Simmer for 5 minutes until thickened.
- Serve chicken with sauce drizzled on top.
Notes
- Use fresh parmesan for the best flavor.
- Chicken is done when internal temperature reaches 165°F (74°C).
- Store leftovers in an airtight container for up to 3 days.
