Description

Ingredients

  • 1 cup white rice
  • 2 cups water
  • 1/2 cup grated parmesan cheese
  • 1 cup diced tomatoes
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a pot, bring the water to a boil and add the rice. Reduce heat, cover, and simmer for 15 minutes.
  3. Heat olive oil in a pan over medium heat. Add garlic and sauté for 1 minute.
  4. Add diced tomatoes, salt, and pepper. Cook for 3-4 minutes until tomatoes soften.
  5. Stir in cooked rice and mix well.
  6. Sprinkle parmesan cheese over the rice and let it crisp for 2 minutes without stirring.
  7. Garnish with fresh parsley and serve hot.

  • Use freshly grated parmesan for better crispiness.
  • Add a pinch of red pepper flakes for extra heat.
