Ingredients

- 1 cup white rice
- 2 cups water
- 1/2 cup grated parmesan cheese
- 1 cup diced tomatoes
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh parsley, chopped
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a pot, bring the water to a boil and add the rice. Reduce heat, cover, and simmer for 15 minutes.
- Heat olive oil in a pan over medium heat. Add garlic and sauté for 1 minute.
- Add diced tomatoes, salt, and pepper. Cook for 3-4 minutes until tomatoes soften.
- Stir in cooked rice and mix well.
- Sprinkle parmesan cheese over the rice and let it crisp for 2 minutes without stirring.
- Garnish with fresh parsley and serve hot.
Notes
- Use freshly grated parmesan for better crispiness.
- Add a pinch of red pepper flakes for extra heat.
- Leftovers can be stored in the fridge for up to 2 days.
