- 4 lbs chicken pieces
- 2 cups buttermilk
- 2 cups all-purpose flour
- 1 tbsp salt
- 1 tbsp black pepper
- 1 tbsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- Vegetable oil for frying
Instructions
- Soak chicken in buttermilk for at least 2 hours or overnight.
- Mix flour and spices in a large bowl. Dredge chicken pieces in the flour mixture.
- Heat oil to 350°F in a deep fryer or heavy skillet. Fry chicken for 15-20 minutes until golden brown and internal temperature reaches 165°F.
Notes
- Use a thermometer to check oil temperature.
- Let chicken rest on a wire rack after frying.
- For extra crispiness, double dredge the chicken.
