Delicious and satisfying crispy tofu served over a bed of peanut noodles, perfect for a quick and healthy meal.
Ingredients

- 14 oz firm tofu
- 1/4 cup cornstarch
- 1/4 cup vegetable oil
- 1/2 cup peanut butter
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey or maple syrup
- 8 oz cooked noodles
- 2 green onions
- 1/4 cup crushed peanuts
- 1 tablespoon sesame seeds
- for garnish cilantro
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the cubed tofu in cornstarch until evenly coated.
- Heat vegetable oil in a skillet over medium-high heat. Add the tofu and fry until crispy and golden brown on all sides, about 10-15 minutes.
- In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, and honey or maple syrup until smooth.
- In a large bowl, combine the cooked noodles and the peanut sauce, mixing until well coated.
- Serve the peanut noodles topped with crispy tofu, sliced green onions, crushed peanuts, sesame seeds, and fresh cilantro.
Notes
- For extra spice, add red pepper flakes to the peanut sauce.
- You can use any type of noodles you prefer: rice noodles, udon, or even spaghetti.
- Store any leftovers in an airtight container in the refrigerator.
