Delicious and satisfying crispy tofu served over a bed of peanut noodles, perfect for a quick and healthy meal.


Ingredients

  • 14 oz firm tofu
  • 1/4 cup cornstarch
  • 1/4 cup vegetable oil
  • 1/2 cup peanut butter
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey or maple syrup
  • 8 oz cooked noodles
  • 2 green onions
  • 1/4 cup crushed peanuts
  • 1 tablespoon sesame seeds
  • for garnish cilantro

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cubed tofu in cornstarch until evenly coated.
  3. Heat vegetable oil in a skillet over medium-high heat. Add the tofu and fry until crispy and golden brown on all sides, about 10-15 minutes.
  4. In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, and honey or maple syrup until smooth.
  5. In a large bowl, combine the cooked noodles and the peanut sauce, mixing until well coated.
  6. Serve the peanut noodles topped with crispy tofu, sliced green onions, crushed peanuts, sesame seeds, and fresh cilantro.

Notes

  • For extra spice, add red pepper flakes to the peanut sauce.
  • You can use any type of noodles you prefer: rice noodles, udon, or even spaghetti.
  • Store any leftovers in an airtight container in the refrigerator.
