Ingredients

- 3 lbs beef chuck roast
- 1/2 cup balsamic vinegar
- 1 cup beef broth
- 1 onion, sliced
- 4 garlic cloves, minced
- 2 carrots, chopped
- 2 potatoes, cubed
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
Instructions
- Season the beef with salt and pepper.
- Place onions, carrots, and potatoes in the crock pot.
- Add the beef on top of the vegetables.
- Pour balsamic vinegar and beef broth over the beef.
- Sprinkle minced garlic and thyme.
- Cover and cook on low for 8 hours.
- Shred the beef and serve with vegetables.

- Use a lean cut of beef for best results.
- Adjust cooking time based on your crock pot.
