Description

A classic French stew made with beef, red wine, and vegetables, slow-cooked to perfection in a crockpot.


Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 1 large onion, chopped
  • 3 carrots, sliced
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 2 cups red wine
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a pan over medium-high heat. Brown the beef cubes on all sides, then transfer to the crockpot.
  2. In the same pan, sauté onions, carrots, and garlic until softened. Add to the crockpot.
  3. Stir in mushrooms, red wine, beef broth, tomato paste, thyme, rosemary, bay leaf, salt, and pepper.
  4. Cover and cook on low for 7-8 hours or high for 4-5 hours until beef is tender.
  5. Remove the bay leaf before serving.

Notes

  • Use a full-bodied red wine like Burgundy or Pinot Noir.
  • For a thicker sauce, mix 1 tbsp cornstarch with 2 tbsp water and stir into the stew 30 minutes before cooking ends.
  • Serve with mashed potatoes or crusty bread.
