Ingredients

- 2 lbs beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 4 medium carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon tomato paste
- 2 teaspoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a skillet over medium heat.
- Brown the beef cubes on all sides.
- Transfer the beef to the crockpot.
- Add carrots, potatoes, onion, and garlic to the pot.
- Stir in beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
- Cover and cook on low for 8 hours or high for 4 hours.
- Check for seasoning before serving.
