Ingredients

  • 2 lbs beef stew meat, cubed
  • 4 cups beef broth
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 2 tbsp flour
  • 2 tbsp tomato paste

Instructions

  1. Place beef, carrots, potatoes, onion, and garlic in the crockpot.
  2. In a bowl, mix beef broth, salt, pepper, thyme, flour, and tomato paste.
  3. Pour the mixture over the ingredients in the crockpot.
  4. Stir to combine.
  5. Cover and cook on low for 8 hours or high for 4 hours.
  6. Serve hot.

Notes

  • For thicker stew, add 1 more tbsp of flour.
  • You can substitute beef broth with vegetable broth for a lighter version.
  • Add frozen peas or corn in the last 30 minutes for extra veggies.
