- 1.5 lbs beef stew meat, cubed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 cup beef broth
- 1/2 cup sour cream
- 2 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp flour
- 2 tbsp butter
- 4 large potatoes, peeled and cubed
- 1/4 cup milk
- 2 tbsp butter (for mashed potatoes)
- Salt and pepper to taste (for mashed potatoes)
Instructions
- Place beef, onion, garlic, mushrooms, beef broth, Worcestershire sauce, Dijon mustard, paprika, salt, and pepper in the crockpot.
- Cook on low for 7-8 hours or high for 4-5 hours.
- 30 minutes before serving, mix flour with 2 tbsp melted butter and stir into the crockpot to thicken the sauce.
- Add sour cream and stir well.
- While the beef cooks, boil potatoes until tender, then mash with milk and butter.
- Season mashed potatoes with salt and pepper.
- Serve beef stroganoff over mashed potatoes.
Notes
- For extra flavor, sear the beef before adding it to the crockpot.
- Use full-fat sour cream for a creamier texture.
- Adjust salt and pepper to taste.
