Ingredients

  • 1.5 lbs beef stew meat, cubed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup beef broth
  • 1/2 cup sour cream
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp flour
  • 2 tbsp butter
  • 4 large potatoes, peeled and cubed
  • 1/4 cup milk
  • 2 tbsp butter (for mashed potatoes)
  • Salt and pepper to taste (for mashed potatoes)

Instructions

  1. Place beef, onion, garlic, mushrooms, beef broth, Worcestershire sauce, Dijon mustard, paprika, salt, and pepper in the crockpot.
  2. Cook on low for 7-8 hours or high for 4-5 hours.
  3. 30 minutes before serving, mix flour with 2 tbsp melted butter and stir into the crockpot to thicken the sauce.
  4. Add sour cream and stir well.
  5. While the beef cooks, boil potatoes until tender, then mash with milk and butter.
  6. Season mashed potatoes with salt and pepper.
  7. Serve beef stroganoff over mashed potatoes.

Notes

  • For extra flavor, sear the beef before adding it to the crockpot.
  • Use full-fat sour cream for a creamier texture.
