- 2 lbs boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1/4 cup butter, melted
- 1/2 cup milk
Instructions
- Place chicken, broth, carrots, celery, onion, garlic, thyme, parsley, pepper, and salt in the crockpot.
- Cover and cook on low for 6 hours or high for 3 hours.
- Shred the chicken with two forks.
- In a bowl, mix flour, baking powder, melted butter, and milk to form a dough.
- Drop spoonfuls of dough into the crockpot.
- Cover and cook on high for 1 hour or until dumplings are cooked through.
- Serve warm.
Notes
- Use rotisserie chicken for a quicker version.
- Adjust seasoning to taste.
- Store leftovers in an airtight container for up to 3 days.
