A hearty and comforting crockpot chicken gnocchi soup.
Ingredients

- 1 pound boneless, skinless chicken breasts
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 4 cups chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 package (16 oz) gnocchi
- 2 cups spinach, chopped
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Place chicken, carrots, celery, onion, chicken broth, garlic powder, and Italian seasoning in the crockpot.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Remove chicken, shred it, and return it to the crockpot.
- Add gnocchi and spinach to the crockpot.
- Stir in heavy cream and cook for an additional 30 minutes.
- Season with salt and pepper before serving.
