- 2 boneless, skinless chicken breasts
- 1 (12 oz) package spaghetti, broken into thirds
- 1 (10.5 oz) can cream of chicken soup
- 1 (10.5 oz) can cream of mushroom soup
- 2 cups chicken broth
- 1 (10 oz) can diced tomatoes with green chilies
- 1 small onion, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 2 cups shredded cheddar cheese
Instructions
- Place chicken breasts in the bottom of your crockpot.
- Add broken spaghetti, cream of chicken soup, cream of mushroom soup, chicken broth, diced tomatoes, onion, bell pepper, garlic, salt, pepper, and Italian seasoning.
- Stir to combine all ingredients.
- Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours.
- Remove chicken breasts and shred with two forks.
- Return shredded chicken to the crockpot and stir in cheddar cheese.
- Cover and cook for an additional 15 minutes until cheese is melted.
- Serve hot.
Notes
- For a spicier version, use hot diced tomatoes with green chilies.
- You can substitute rotisserie chicken for the raw chicken breasts to save time.
- Leftovers keep well in the refrigerator for up to 3 days.
