A hearty and flavorful chicken stew made easily in a crockpot. Perfect for a comforting meal.
Ingredients

- 2 lbs boneless, skinless chicken thighs
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chopped onions
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp cornstarch (optional, for thickening)
Instructions
- Place chicken thighs at the bottom of the crockpot.
- Add carrots, celery, onions, and garlic.
- Pour in chicken broth.
- Season with thyme, rosemary, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- If desired, mix cornstarch with 2 tbsp water and stir into the stew to thicken. Cook for an additional 15 minutes.
- Serve hot.
Notes
- You can use chicken breasts instead of thighs for a leaner option.
- Add potatoes or other vegetables if preferred.
- Store leftovers in an airtight container for up to 3 days.
