Description

Ingredients

  • 4 pounds corned beef brisket
  • 1 medium onion, quartered
  • 4 cloves garlic, minced
  • 1 teaspoon black peppercorns
  • 1 bay leaf
  • 6 medium potatoes, quartered
  • 4 carrots, cut into chunks
  • 1 small head of cabbage, cut into wedges
  • 4 cups beef broth

Instructions

  1. Place the corned beef brisket in the crockpot.
  2. Add onion, garlic, peppercorns, and bay leaf.
  3. Pour beef broth over the meat.
  4. Add potatoes and carrots around the meat.
  5. Cover and cook on low for 8 hours.
  6. Add cabbage to the crockpot during the last 2 hours of cooking.
  7. Remove the meat and vegetables, slice, and serve.
