A simple recipe for making corned beef and cabbage in a crockpot.
Ingredients

- 4 pounds corned beef brisket
- 1 medium onion, quartered
- 4 cloves garlic, minced
- 1 teaspoon black peppercorns
- 1 bay leaf
- 6 medium potatoes, quartered
- 4 carrots, cut into chunks
- 1 small head of cabbage, cut into wedges
- 4 cups beef broth
Instructions
- Place the corned beef brisket in the crockpot.
- Add onion, garlic, peppercorns, and bay leaf.
- Pour beef broth over the meat.
- Add potatoes and carrots around the meat.
- Cover and cook on low for 8 hours.
- Add cabbage to the crockpot during the last 2 hours of cooking.
- Remove the meat and vegetables, slice, and serve.

- Adjust cooking time for larger or smaller briskets.
