A simple and hearty dish made with corned beef cooked slowly for rich flavor.
Ingredients

- 3–4 lbs corned beef brisket
- 1 onion, chopped
- 4 carrots, chopped
- 4 potatoes, chopped
- 2 cups beef broth
- 1 tablespoon mustard seeds
- 1 tablespoon peppercorns
Instructions
- Place the chopped onion, carrots, and potatoes at the bottom of the crockpot.
- Rinse the corned beef under cold water and place it on top of the vegetables.
- Sprinkle the mustard seeds and peppercorns over the beef.
- Pour the beef broth over all ingredients.
- Cover and cook on low for 8-10 hours or until the meat is tender.
- Remove the beef and let it rest for a few minutes before slicing.
- Serve with the vegetables and broth.
Notes
- For best results, use a lean cut of corned beef.
- Adjust vegetables based on your preference.
- Leftovers can be stored in the refrigerator for up to 3 days.
