Ingredients

  • 34 lbs corned beef brisket
  • 1 onion, chopped
  • 4 carrots, chopped
  • 4 potatoes, chopped
  • 2 cups beef broth
  • 1 tablespoon mustard seeds
  • 1 tablespoon peppercorns

Instructions

  1. Place the chopped onion, carrots, and potatoes at the bottom of the crockpot.
  2. Rinse the corned beef under cold water and place it on top of the vegetables.
  3. Sprinkle the mustard seeds and peppercorns over the beef.
  4. Pour the beef broth over all ingredients.
  5. Cover and cook on low for 8-10 hours or until the meat is tender.
  6. Remove the beef and let it rest for a few minutes before slicing.
  7. Serve with the vegetables and broth.
