Description

A simple and flavorful crockpot curry chicken dish.


Ingredients

  • 2 lbs chicken thighs
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tablespoons curry powder
  • 1 can coconut milk (400ml)
  • 1 cup chicken broth
  • 1 cup diced tomatoes
  • 1 red bell pepper, chopped
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Place chicken thighs at the bottom of the crockpot.
  2. Add onion, garlic, ginger, curry powder, coconut milk, chicken broth, and diced tomatoes.
  3. Stir to combine all ingredients.
  4. Add chopped red bell pepper on top.
  5. Season with salt and pepper.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  7. Once cooked, shred the chicken in the crockpot.
  8. Garnish with fresh cilantro before serving.
