A simple and flavorful crockpot curry chicken dish.
Ingredients

- 2 lbs chicken thighs
- 1 onion, diced
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 tablespoons curry powder
- 1 can coconut milk (400ml)
- 1 cup chicken broth
- 1 cup diced tomatoes
- 1 red bell pepper, chopped
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Place chicken thighs at the bottom of the crockpot.
- Add onion, garlic, ginger, curry powder, coconut milk, chicken broth, and diced tomatoes.
- Stir to combine all ingredients.
- Add chopped red bell pepper on top.
- Season with salt and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken in the crockpot.
- Garnish with fresh cilantro before serving.
Notes
- Serve with rice or naan.
- Adjust curry powder to taste.
- Can add vegetables like peas or carrots.
