- 3 lbs beef chuck roast
- 1 cup beef broth
- 2 cups carrots, chopped
- 1 onion, sliced
- 4 cloves garlic, minced
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp thyme
- 1 tsp rosemary
- 2 tbsp olive oil
Instructions
- Heat olive oil in a pan over medium heat.
- Brown the beef chuck roast on all sides.
- Place the roast in the crockpot.
- Add the carrots, onion, and garlic around the roast.
- Pour in the beef broth.
- Season with salt, pepper, thyme, and rosemary.
- Cover and cook on low for 8 hours.
- Shred the meat before serving.
Notes
- For extra flavor, add potatoes.
- You can substitute chicken broth.
- Leftovers can be stored in the fridge for up to 3 days.
