A simple and hearty recipe for a St. Patrick’s Day meal made in a crockpot.
Ingredients

- 2 pounds of corned beef
- 4 cups of water
- 1 cup of diced carrots
- 1 cup of diced potatoes
- 1 cup of diced onions
- 2 tablespoons of mustard
- 2 tablespoons of brown sugar
- 1 teaspoon of black pepper
- 1 teaspoon of garlic powder
Instructions
- Place the corned beef in the crockpot.
- Add water, carrots, potatoes, and onions.
- In a bowl, mix mustard, brown sugar, black pepper, and garlic powder.
- Spread the mixture over the corned beef.
- Cover and cook on low for 8 hours.
- Slice and serve with vegetables.
Notes
- Adjust seasoning to taste.
- Leftovers can be refrigerated for up to 3 days.
- Serve with soda bread for a complete meal.
