- 4 boneless, skinless chicken breasts
- 1 cup cherry tomatoes, halved
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup corn, frozen or fresh

- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/4 cup fresh basil, chopped (for garnish)
Instructions
- In a skillet over medium heat, add olive oil and sauté the onions and garlic until fragrant.
- Place the chicken breasts in the crockpot, and season them with salt, pepper, and Italian seasoning.
- Add the sautéed onions and garlic on top of the chicken.
- Layer the cherry tomatoes, bell pepper, and corn over the chicken.
- Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through and tender.
- Once done, shred the chicken with two forks and stir it into the vegetables.
