Description

A simple recipe for a tender and juicy whole chicken cooked in a crockpot.


Ingredients

  • 1 whole chicken (45 lbs)
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 lemon, halved
  • 4 sprigs fresh rosemary
  • 1 onion, quartered
  • 2 cups chicken broth

Instructions

  1. Prepare the chicken by removing any giblets and patting it dry.
  2. Season the chicken with salt, pepper, garlic powder, onion powder, and paprika.
  3. Place the onion and lemon inside the cavity of the chicken.
  4. Put the chicken in the crockpot and add rosemary on top.
  5. Pour chicken broth around the chicken.
  6. Cover and cook on low for 6-8 hours or until the chicken reaches an internal temperature of 165°F.
  7. Carefully remove the chicken from the crockpot and let it rest for 10 minutes before carving.

Notes

  • For extra flavor, you can marinate the chicken overnight.
  • Use the leftover broth for soup or gravy.
  • Store any leftover chicken in the refrigerator for up to 3 days.
