Ingredients

- 1 whole chicken (about 4–5 lbs)
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 tablespoon olive oil
- 1 lemon, halved
- Fresh herbs (like thyme or rosemary)
Instructions
- Pat the chicken dry with paper towels.
- Mix the salt, pepper, garlic powder, onion powder, and paprika in a small bowl.
- Rub the olive oil over the chicken.
- Sprinkle the spice mixture over the chicken, coating it evenly.
- Place the lemon halves and fresh herbs inside the cavity of the chicken.
- Place the chicken in the crockpot breast side up.
- Cover and cook on low for 6-8 hours or until the chicken reaches 165°F internally.
- Remove the chicken and let it rest for 10 minutes before carving.
Notes
- Adjust the cooking time based on the size of your chicken.
- Use a meat thermometer for accurate cooking.
- Leftover chicken can be stored in the refrigerator for up to 4 days.
