Instructions

  1. Pat the chicken dry with paper towels.
  2. Mix the salt, pepper, garlic powder, onion powder, and paprika in a small bowl.
  3. Rub the olive oil over the chicken.
  4. Sprinkle the spice mixture over the chicken, coating it evenly.
  5. Place the lemon halves and fresh herbs inside the cavity of the chicken.
  6. Place the chicken in the crockpot breast side up.
  7. Cover and cook on low for 6-8 hours or until the chicken reaches 165°F internally.
  8. Remove the chicken and let it rest for 10 minutes before carving.
