A simple and delicious recipe for cooking a whole chicken in a crockpot.
Ingredients

- 1 whole chicken (about 4–5 pounds)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 lemon, quartered
- 1 onion, quartered
- Fresh herbs (rosemary, thyme, or parsley)
Instructions
- Rub the olive oil over the entire chicken.
- Season the chicken with salt, pepper, garlic powder, onion powder, and paprika.
- Place the lemon and onion quarters inside the cavity of the chicken.
- Add fresh herbs to the cavity as well.
- Place the chicken in the crockpot, breast side up.
- Cover and cook on low for 6-8 hours or high for 4-5 hours.
- Check the internal temperature; it should reach 165°F.
- Let the chicken rest for 10 minutes before carving.
Notes
- Use a meat thermometer for best results.
- Leftovers can be stored in the refrigerator for up to 4 days.
- Great for meal prep; use in salads or sandwiches.
