Ingredients

  • 1 whole chicken (about 45 pounds)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 lemon, quartered
  • 1 onion, quartered
  • Fresh herbs (rosemary, thyme, or parsley)

Instructions

  1. Rub the olive oil over the entire chicken.
  2. Season the chicken with salt, pepper, garlic powder, onion powder, and paprika.
  3. Place the lemon and onion quarters inside the cavity of the chicken.
  4. Add fresh herbs to the cavity as well.
  5. Place the chicken in the crockpot, breast side up.
  6. Cover and cook on low for 6-8 hours or high for 4-5 hours.
  7. Check the internal temperature; it should reach 165°F.
  8. Let the chicken rest for 10 minutes before carving.
