These delightful cucumber rolls are filled with creamy cheese and savory smoked salmon, perfect for a fresh appetizer or snack.

- 1 large cucumber
- 8 oz cream cheese, softened
- 4 oz smoked salmon, thinly sliced
- 1 tablespoon fresh dill, chopped (optional)
- 1 teaspoon lemon juice
- Salt and pepper to taste
Instructions
- Wash and peel the cucumber. Using a vegetable peeler or mandoline, slice the cucumber into thin strips lengthwise.
- In a mixing bowl, combine the softened cream cheese, lemon juice, dill, salt, and pepper. Mix until smooth and well combined.
- Lay the cucumber strips flat on a clean surface. Spread a thin layer of the cream cheese mixture over each strip.
- Place a slice of smoked salmon on top of the cream cheese layer.
- Starting at one end, carefully roll the cucumber strip tightly around the salmon. Repeat with the remaining strips.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.
Notes
- For extra flavor, add capers or red onion slices to the filling.
- You can also use flavored cream cheeses for added variety.
