These delightful cucumber rolls are filled with creamy cheese and savory smoked salmon, perfect for a fresh appetizer or snack.


Ingredients

  • 1 large cucumber
  • 8 oz cream cheese, softened
  • 4 oz smoked salmon, thinly sliced
  • 1 tablespoon fresh dill, chopped (optional)
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Wash and peel the cucumber. Using a vegetable peeler or mandoline, slice the cucumber into thin strips lengthwise.
  2. In a mixing bowl, combine the softened cream cheese, lemon juice, dill, salt, and pepper. Mix until smooth and well combined.
  3. Lay the cucumber strips flat on a clean surface. Spread a thin layer of the cream cheese mixture over each strip.
  4. Place a slice of smoked salmon on top of the cream cheese layer.
  5. Starting at one end, carefully roll the cucumber strip tightly around the salmon. Repeat with the remaining strips.
  6. Serve immediately or chill in the refrigerator for 30 minutes before serving.

Notes

  • For extra flavor, add capers or red onion slices to the filling.
  • You can also use flavored cream cheeses for added variety.
