A flavorful curry chicken served with basmati rice.
Ingredients

- 500g chicken thighs, cut into pieces
- 1 cup basmati rice
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tbsp ginger, grated
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 can (400ml) coconut milk
- 2 tbsp vegetable oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat oil in a pan over medium heat.
- Add onion, garlic, and ginger. Cook until soft.
- Add chicken pieces and cook until browned.
- Stir in curry powder, turmeric, and cumin.
- Pour in coconut milk and simmer for 20 minutes.
- Meanwhile, cook basmati rice according to package instructions.
- Serve curry chicken over rice and garnish with cilantro.
Notes
- Adjust spice levels to your preference.
- For extra flavor, marinate chicken in spices for 30 minutes before cooking.
- Use fresh coconut milk for best results.
