Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, rinsed
- 1 cup corn
- 1 red bell pepper, diced
- 1 avocado, sliced
- 1 lime, juiced
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Fluff quinoa with a fork.
- In a bowl, mix black beans, corn, and diced red bell pepper.
- Season with lime juice, cumin, salt, and pepper.
- Add quinoa to the mixture and stir well.
- Top with sliced avocado before serving.
Notes
- Adjust seasoning as per your taste.
- Can be served warm or cold.
- Store leftovers in an airtight container in the fridge.
