Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, rinsed and drained
- 1 cup corn, frozen or fresh
- 1 red bell pepper, diced
- 1 avocado, diced
- 1 lime, juiced
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, bring the vegetable broth to a boil.
- Add quinoa and reduce to a simmer. Cook for 15 minutes or until liquid is absorbed.
- In a large bowl, combine black beans, corn, bell pepper, and avocado.
- Add the cooked quinoa to the bowl.
- Drizzle with lime juice and sprinkle with cumin, salt, and pepper.
- Toss gently to combine all ingredients.
- Serve immediately or store in the refrigerator for later.
