Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, drained
- 1 cup corn, frozen or fresh
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 15 minutes or until quinoa is fluffy.
- In a skillet, sauté onion and garlic until soft.
- Add bell pepper, corn, black beans, cumin, salt, and pepper. Cook for 5 minutes.
- Mix the sautéed vegetables with quinoa.
- Garnish with fresh cilantro before serving.
