Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, rinsed
- 1 cup diced tomatoes
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 15 minutes.
- In a separate pan, sauté onion, garlic, and bell pepper until soft.
- Add black beans and tomatoes to the pan. Stir in cumin, salt, and pepper.
- Mix quinoa with the vegetable mixture.
- Serve warm.
Notes
- Adjust seasoning according to your taste.
- Serve with a side salad for a complete meal.
- Store leftovers in the refrigerator for up to 3 days.
