A simple and healthy dinner recipe suitable for the Daniel Fast.
Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup chopped vegetables (bell peppers, zucchini, carrots)
- 1 can black beans, rinsed and drained
- 1 teaspoon olive oil
- 1 teaspoon cumin
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Rinse quinoa under cold water.
- In a pot, bring vegetable broth to a boil.
- Add quinoa and reduce heat to low.
- Cover and simmer for 15 minutes.
- In a skillet, heat olive oil over medium heat.
- Add chopped vegetables and sauté for 5 minutes.
- Stir in black beans, cumin, and salt. Cook for another 5 minutes.
- Fluff quinoa with a fork and combine with vegetable mixture.
- Garnish with fresh cilantro before serving.

- This recipe is vegan and gluten-free.
- You can use any vegetables you prefer.
