Ingredients

  • 8 oz dark chocolate (70% cocoa or higher), chopped
  • 1/2 cup heavy cream
  • 1 tbsp unsalted butter
  • 1/2 tsp sea salt, plus extra for garnish
  • 1 tsp vanilla extract
  • 1/4 cup cocoa powder (for dusting)

Instructions

  1. Place chopped dark chocolate in a heatproof bowl.
  2. Heat heavy cream and butter in a saucepan over medium heat until it just begins to simmer.
  3. Pour the hot cream mixture over the chocolate and let it sit for 2 minutes.
  4. Stir until smooth, then add sea salt and vanilla extract.
  5. Cover and refrigerate for 2 hours or until firm.
  6. Scoop small portions and roll into balls using your hands.
  7. Roll truffles in cocoa powder or sprinkle with extra sea salt.
  8. Store in the refrigerator until ready to serve.
