Instructions
- In a bowl, mix cream cheese, sugar, and vanilla until smooth.
- Fold in diced strawberries.
- Divide the mixture evenly among the tortillas, placing it in the center.
- Fold the sides of the tortillas inward, then roll tightly to form chimichangas.
- Brush the outside with beaten egg.
- Heat butter in a skillet over medium heat and cook chimichangas until golden brown on all sides.
- Roll in cinnamon sugar while still warm.
- Serve immediately.
