Ingredients

  • 2 cups old-fashioned oats
  • 1 cup nut butter (peanut, almond, or cashew)
  • 1/2 cup honey or maple syrup
  • 1/2 cup chopped nuts (almonds, walnuts, or pecans)
  • 1/2 cup dried fruits (raisins, cranberries, or apricots)
  • 1/4 cup mini chocolate chips (optional)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper, leaving some overhang for easy removal.
  2. In a large bowl, combine the oats, chopped nuts, dried fruits, and chocolate chips (if using).
  3. In a separate bowl, mix together the nut butter, honey or maple syrup, vanilla extract, and salt until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until everything is evenly coated.
  5. Transfer the mixture to the prepared baking dish and press it down firmly to create an even layer.
  6. Bake in the preheated oven for 20-25 minutes or until the edges are golden brown.
  7. Remove from the oven and let cool completely in the pan before lifting out using the parchment paper.
  8. Cut into bars and store in an airtight container at room temperature for up to a week.

Notes
