Ingredients

  • 1 cup semisweet chocolate chips
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Powdered sugar, for dusting
  • Fresh berries, for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour, tapping out the excess.
  2. In a microwave-safe bowl, combine the butter and chocolate chips. Heat in the microwave in 30-second intervals, stirring until smooth.
  3. In a separate bowl, whisk together the eggs, egg yolks, and granulated sugar until pale and thick.
  4. Add the melted chocolate mixture, flour, vanilla extract, and a pinch of salt to the egg mixture. Stir until just combined.
  5. Divide the batter evenly among the prepared ramekins.
  6. Place the ramekins on a baking sheet and bake for 12-14 minutes, until the edges are firm but the center is still soft.
  7. Remove from the oven and let cool for 1 minute. Carefully invert each ramekin onto a plate and gently tap to release the cake.
  8. Dust with powdered sugar and garnish with fresh berries if desired. Serve immediately and enjoy the gooey center!

Notes

  • For a richer flavor, use dark chocolate instead of semisweet.
  • Make sure not to overbake the cakes; the center should remain molten.
  • These cakes can be made ahead of time and refrigerated. Just add a few extra minutes to the baking time if baking from cold.
