Ingredients
Scale
- 1/2 cup (1 stick) unsalted butter
- 1 cup semisweet chocolate chips
- 2 large eggs
- 2 large egg yolks
- 1/4 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon vanilla extract
- Pinch of salt
- Powdered sugar, for dusting
- Fresh berries, for garnish (optional)
Instructions
- Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour, tapping out the excess.
- In a microwave-safe bowl, combine the butter and chocolate chips. Heat in the microwave in 30-second intervals, stirring until smooth.
- In a separate bowl, whisk together the eggs, egg yolks, and granulated sugar until pale and thick.
- Add the melted chocolate mixture, flour, vanilla extract, and a pinch of salt to the egg mixture. Stir until just combined.
- Divide the batter evenly among the prepared ramekins.
- Place the ramekins on a baking sheet and bake for 12-14 minutes, until the edges are firm but the center is still soft.
- Remove from the oven and let cool for 1 minute. Carefully invert each ramekin onto a plate and gently tap to release the cake.
- Dust with powdered sugar and garnish with fresh berries if desired. Serve immediately and enjoy the gooey center!
Notes
- For a richer flavor, use dark chocolate instead of semisweet.
- Make sure not to overbake the cakes; the center should remain molten.
- These cakes can be made ahead of time and refrigerated. Just add a few extra minutes to the baking time if baking from cold.
