Description

Indulge in these rich and gooey mini chocolate lava cakes, perfectly portioned for two. Each cake has a molten chocolate center that flows out when you cut into it, making it an ideal dessert for a romantic evening or a cozy night in.

Ingredients

Scale
  • 2 oz unsweetened chocolate (chopped)
  • 2 tbsp unsalted butter (plus extra for greasing)
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 1/2 tsp vanilla extract
  • 2 tbsp all-purpose flour
  • for dusting powdered sugar

Instructions

  1. Preheat your oven to 425°F (220°C). Grease two ramekins with butter and dust with flour to prevent sticking.
  2. In a microwave-safe bowl, combine the chopped chocolate and butter. Microwave in 30-second increments, stirring in between, until melted and smooth.
  3. Whisk in the granulated sugar until combined, then add the egg, egg yolk, and vanilla extract. Mix until smooth.
  4. Gently fold in the flour until just combined. Do not overmix.
  5. Divide the batter evenly between the prepared ramekins.
  6. Bake in the preheated oven for 12-14 minutes, until the edges are firm but the center is soft.
  7. Let the cakes cool for 1 minute, then carefully invert onto plates. Dust with powdered sugar before serving.

Notes

  • For a richer flavor, you can add a tablespoon of espresso powder to the batter.
  • Serve with a scoop of vanilla ice cream or fresh berries for an extra touch.
