Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup chopped broccoli
- 1 red bell pepper, diced
- 1 can black beans, drained
- 1 tsp cumin
- 1 tsp olive oil
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 15 minutes.
- In a pan, heat olive oil over medium heat.
- Add broccoli and bell pepper. Cook for 5 minutes.
- Add black beans, cumin, salt, and pepper. Stir well.
- Combine vegetable mixture with quinoa.
- Serve warm.
Notes
- For added flavor, include garlic or onion.
- You can substitute quinoa with brown rice.
- Feel free to add other vegetables.
