- 8 oz (225 g) dark chocolate, chopped
- 2 tablespoons unsalted butter
- 3 large eggs, separated
- 1/4 cup (50 g) granulated sugar
- 1 cup (240 ml) heavy cream
- 1 teaspoon vanilla extract
- A pinch of salt
- Chocolate shavings (for garnish)
Instructions
- In a heatproof bowl, melt the chopped dark chocolate and butter together over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.
- In a separate bowl, whisk the egg yolks with the granulated sugar until pale and creamy. Stir in the melted chocolate mixture and vanilla extract until well combined.
- In another bowl, beat the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until no white streaks remain.
- In a clean bowl, whisk the egg whites with a pinch of salt until stiff peaks form. Carefully fold the egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.
- Spoon the mousse into individual serving dishes or glasses and refrigerate for at least 2 hours or until set.
- Before serving, garnish with chocolate shavings.
Notes
- For a richer flavor, use high-quality dark chocolate with at least 70% cocoa content.
- Make sure to separate the eggs carefully to avoid any yolk in the whites for better volume.
- You can add a splash of liqueur such as Grand Marnier or Kahlua to the chocolate mixture for an adult twist.
