Ingredients

  • 8 oz (225 g) dark chocolate, chopped
  • 2 tablespoons unsalted butter
  • 3 large eggs, separated
  • 1/4 cup (50 g) granulated sugar
  • 1 cup (240 ml) heavy cream
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • Chocolate shavings (for garnish)

Instructions

  1. In a heatproof bowl, melt the chopped dark chocolate and butter together over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.
  2. In a separate bowl, whisk the egg yolks with the granulated sugar until pale and creamy. Stir in the melted chocolate mixture and vanilla extract until well combined.
  3. In another bowl, beat the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until no white streaks remain.
  4. In a clean bowl, whisk the egg whites with a pinch of salt until stiff peaks form. Carefully fold the egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.
  5. Spoon the mousse into individual serving dishes or glasses and refrigerate for at least 2 hours or until set.
  6. Before serving, garnish with chocolate shavings.

Notes

  • For a richer flavor, use high-quality dark chocolate with at least 70% cocoa content.
  • Make sure to separate the eggs carefully to avoid any yolk in the whites for better volume.
  • You can add a splash of liqueur such as Grand Marnier or Kahlua to the chocolate mixture for an adult twist.
