Ingredients

  • 1 cup dried apricots, chopped
  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/2 cup almonds, chopped
  • 1/4 cup chia seeds
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. In a large bowl, combine the chopped dried apricots, rolled oats, almond butter, chopped almonds, chia seeds, honey or maple syrup, vanilla extract, cinnamon, and salt.
  2. Mix all ingredients until well combined. If the mixture is too crumbly, add a little more almond butter or honey.
  3. Once mixed, refrigerate the mixture for about 30 minutes to make it easier to shape.
  4. After chilling, scoop out tablespoon-sized amounts of the mixture and roll them into balls.
  5. Store the energy balls in an airtight container in the refrigerator for up to a week.
