These no-bake energy balls are packed with dried apricots, nuts, and seeds for a healthy snack that’s perfect for on-the-go.
Ingredients

- 1 cup dried apricots, chopped
- 1 cup rolled oats
- 1/2 cup almond butter
- 1/2 cup almonds, chopped
- 1/4 cup chia seeds
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- Pinch of salt
Instructions
- In a large bowl, combine the chopped dried apricots, rolled oats, almond butter, chopped almonds, chia seeds, honey or maple syrup, vanilla extract, cinnamon, and salt.
- Mix all ingredients until well combined. If the mixture is too crumbly, add a little more almond butter or honey.
- Once mixed, refrigerate the mixture for about 30 minutes to make it easier to shape.
- After chilling, scoop out tablespoon-sized amounts of the mixture and roll them into balls.
- Store the energy balls in an airtight container in the refrigerator for up to a week.
Notes
- Feel free to customize with your favorite nuts or seeds.
- For a chocolate twist, add mini chocolate chips or cocoa powder to the mixture.
