Ingredients

  • 100g unsalted butter, melted
  • 400g cream cheese
  • 200g sour cream
  • 150g sugar
  • 200g dark chocolate, melted
  • 3 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Crush the chocolate cookies into fine crumbs.
  3. Mix the cookie crumbs with melted butter.
  4. Press the mixture into the bottom of a springform pan to form the crust.
  5. In a bowl, beat cream cheese and sugar until smooth.
  6. Add sour cream, melted chocolate, eggs, and vanilla. Mix until combined.
  7. Pour the cheesecake batter over the crust.
  8. Bake for 50-60 minutes until set.
  9. Let it cool, then refrigerate for at least 4 hours before serving.
