- 2 lbs boneless, skinless chicken breasts, cubed
- 1 cup Greek yogurt
- 1/2 cup grated cucumber
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tsp dried dill
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup crumbled feta cheese
- 1/2 cup sliced black olives
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix Greek yogurt, grated cucumber, garlic, lemon juice, dill, salt, and pepper.
- Add chicken cubes to the yogurt mixture and stir to coat.
- Transfer mixture to a baking dish.
- Top with feta cheese and black olives.
- Drizzle with olive oil.
- Bake for 40 minutes or until chicken is fully cooked.
- Let rest for 5 minutes before serving.
Notes
- Use full-fat Greek yogurt for best texture.
- Squeeze excess water from grated cucumber before mixing.
- Serve with pita bread or rice.
